For instance, you could set a low quality recording of jpegs while shooting a movie that could be saved to a separate card like the eyefi card and possibly remote transfer to the ipad or to a server, and technically be able to then view it almost real time.

Very helpful for video, ive seen security cameras use these live thumbnails to make a "like" live web page that works on mobile phones so that you can see what the camera is seeing.

Just a thought. Got a eyefi card and thought this would be the only way to make streaming video work.

There might not be enough processor for that. You can already "kinda" do that with tethered jpeg preview.  If the jpegs worked tetherless we could be recording them. They are supposed to be 4:2:2.
