FPS override> Optimize for....

Can anyone tell me why-when you might choose one of the various optimize settings?
ie

low jello
high jello
low light

Also , why would you ever use a very low setting, say 1 fps, instead of the intervalometer, for doing timelapses?
Always using the intervalometer makes more sense to me because you have higher quality still images to work with, even if they you are shooting JPEG since you can choose a higher resolution than you get when shooting video.

Because shooting proper pictures wears your shutter down. You are free to choose according to your needs.
