I didn't use any ND filters. I did some color correction and effects during post production and made sure the sun was behind me when taking the day shots. Note: I didn't color correct, or add effects for the last two sunset clips (sharpened only).

On the 60D you have to press the "Q" button to go to the sub menus. - Not sure on the 500D.
