Newbie: Best settings for B&W?

Hi,

I am new to DSLR Video/Photography (just got a 600D) and starting using Magic Lantern too, so please forgive me for this naive question...

I am going to shoot next saturday movie + pictures that should be used in Black & White. But sometimes in color too.
So I am thinking of shooting in color Raw and do after the B&W process in Photoshop.

I am looking for the best quality for the shooting

I didn't find any UniWB600D.cr2 file for my 600D here:

So perhaps before playing with UniWB method, I should wait a little:

Well, I am half way and about to renounce.
Just shoot with Picture style: Auto, make a real white (grey) balance before shooting, and record jpg+raw pictures...

What do yo think?
