I found Capture One has the best color profiles for the EOS M, which even has a Prostandard one listed under Canon 7D (same sensor used). The colors seem more accurate then even Lightroom. The problem I am facing is trying to match Capture One's image exactly to Resolve's one. The same image was captured at full resolution movie mode with an image extracted from MLV in DNG form.

I took the same picture as a RAW CR2 file and compared the DNG image to see if Capture One matches the color exactly the same for both images and it does! This is exactly the same DNG image, but noticed there isn't enough orange in the concrete slabs which I tried to color match, but found when I increase the orange that the orange in the rest of the image becomes too saturated. Also the contrast is off in the resolve image as well. How do I go about color grading this?

The first image is capture one and the second is davinci.

You did a better job then what I could do, but the overall orange-yellow tones in the concrete slabs are missing. I wish the secret to capture's one profiles could be figured out.

I ran some other tests and noticed that the rich brown colors are missing on the images of musical instruments as well. There must be a way to do this without over-saturating the image.

it will close if you add more saturation to it..
if you notice, the two image has different color balance that why you can't just add saturation to make it match
I think try to edit same file from both editor and see the result..

You need to configure properly Resolve Color Management Color Space,Timeline Color Space, and Output Color Space, as well a choosing the Raw Profile of your shots, if you need help with that there is a free course on BMD website :
