As a wedding cinematographer i recommend to use the most reliable 1080p settings. The customers dont give a sh1t about 4K-6K, they care about the emotions. So proper framing and careful focusing is much more important than 3,5K / 5,7K crispness.
If you can do slow motion reliably like 48 fps with all the assist tools working it's even better, but im not sure if the 5D can save audio in that mode. External audio recording could be the solution.
So 1920x1080 10 bit lossless 24/48 fps is your best choice. Why not 14 bit? You dont want to work with 500GB+ of footage at the end of the day...
