what works best for settings and post workflow when shooting in b&w for stills and video?

IMO there is nothing won by shooting b&w with CFA sensors. Grade/filter in post.

As Walter says, there is nothing gained shooting b&w in cam.
But grading raw to b&w you get all the advantages of pulling RGB channels in monochrome and thereby emulating the colored Filters that one would use with B&w film photography.
Try 100% desaturation and then pull/push individually the RGB channels, there is drastic difference in how your B&W pictures will come out. Enjoy!
