Is there a link somewhere to a primer on what crop mode is - and when one might want to use it?

More specifically - I'm wondering if it will help me turn a non-macro lens into a sort of macro lens, e.g. to get imagery which is closer to the subject and still be in focus than would normally be possible?

Sorry, this is not what you are looking for.
If you magnify a picture (and that's what cropping does) FOV will decrease and DOP will decrease, too. And all other image parameters will go down, too. Sharpness, aberrations, ...  The closer you look ...

Crop mode for RAW/MLV video will reduce artefacts caused by line skipping (lookup "line skipping") for non-5D3 cams and allow higher resolutions.

If you want to make macros with non-macro lenses you might want to use extension rings (= macro rings), bellows, retro mounting (for wide angle lenses), close-up "filters".
These methods are pretty much covered. Google is your friend.
