Using 700D/T5i :

If I'm limited to 720p on the 700D when shooting RAW video... wouldn't the HDR Video module option at 1080p be a better way to go?

Thanks for any advice on the pro's and cons of each method!

I'm not an expert, but I would say that the RAW is better in most ways. RAW even in 720p seems to be sharper than canon 1080p in most cases, and for short takes you could set higher than 720p resolution. HDR video will only match/exceed RAW in terms of dynamic range, but is no substitute for the 14 bit RAW image in terms of how extreme you can grade it, and it will probably have issues with fast moving action as well as being a pain to look at before HDR processing. You could always use RAW and HDR and get the worst of both :D
